Poppycock or Caramel Popcorn
I'm not a cook. I actually hate cooking, but baking, now that I can do. My mother (the best hostess in the world) has incredible recipes. Like her recipe for carmel corn, it is so delicious and amazing I have to warn you that it's easy to eat buckets in one sitting. So I thought I would share this fantastic and easy recipe so you can impress your friends.
Poppycock or Caramel Corn
2 cups brown sugar
1 cup margarine or butter
1/2 cup corn syrup
Boil the first 3 ingredients for 5 minutes (The longer you boil the mixture the harder it will become.) Remove from heat and add the next 4 ingredients
A pinch of salt
A pinch of cream of tartar
1/2 tsp baking soda
1/2 tsp vanilla
1 cup of pecans (can also use almonds, cashews, etc...)
Next pour the mixture over 16 cups of popcorn. Put in a roasting pan and bake in the oven for an hour at 200º F, stir it every 15 min. As it cools stir every 15 min, you can also put it on cookie sheets to cool. Keep in air tight container or eat right away!
